Strawberry and berry mix Graham millefeuille

Ingredients

500ml (2 cups) whipped cream 35% (Code DL 156158)

60ml (1/4 cup) powdered sugar (Code DL 349024)

187ml (3/4 cup) tempered cream cheese (Code DL 329958)

60ml (1/4 cup) Fairlee frozen strawberry mix (Code DL 455060)

60ml (1/4 cup) Fairlee frozen berry mix (Code DL 461894)

12 to 18 units Graham cookies (Code DL 321761)

30ml (2 tablespoons) Fairlee frozen strawberry mix (Code DL 455060) for brushing on Graham cookies

Berries

Preparation

  1. In a bowl with a stand mixer or electric mixer, whip the cream for about 2 minutes. Add powdered sugar and tempered cream cheese and beat for another 1-2 minutes or until creamy. Separate the mixture into 2. Pour half the cream with the frozen strawberry mixture and the other half with the frozen berry mixture. Mix well with a whisk. Set aside.
  2. Place all cookies on a baking sheet and brush with frozen strawberry mix. Place the strawberry cream on 4 Graham cookies and add a second Graham cookie on top of the cream. Next, place the berry cream on top and add again a Graham cookie. Add the whipped cream to the top of the millefeuille. Set aside.

  3. Place the millefeuille on the plate, garnish with berries and serve.
