S'mores Ice Cream Sandwich

Ingredients

125ml (½ cup) brown sugar

125ml (1/2 cup) sugar

125ml (1/2 cup) butter

1 egg

10ml (2 teaspoons) vanilla

375ml (1 ½ cups) graham crumbs

250ml (1 cup) flour

1ml (1/4 teaspoon) salt

2.5ml (1/2 tsp.) baking soda

 

Chocolate chips

15 large marshmallows

6 chocolate pieces

Vanilla ice cream

Preparation

Preheat oven to 175°C (350°F).

  1. Place brown sugar, sugar and butter in a food processor bowl. Mix in blender for 2 to 3 minutes. Add egg and blend for 1 minute. Add vanilla, flour, graham crumbs, salt and baking soda. Blend once more in blender (approx. 1 minute) to obtain a smooth, homogeneous cookie dough.

  2. Make a dozen balls of cookie dough (approx. 1 ½ to 2 oz.) using an ice-cream scoop, and place on a baking sheet lined with parchment paper. Flatten the balls slightly and place a piece of chocolate on 6 cookies. Bake for 10 minutes. Remove from oven and let cool.
  3. Melt chocolate pastilles. Make 6 chocolate circles on parchment paper to create pastilles the circumference of the cookies. Set aside to cool for 2-3 minutes.

  4. Prepare marshmallows. Cut marshmallows in half, then make a circle with 5 marshmallow halves. Repeat 5 times.

  5. Assemble ice cream sandwiches. Place a scoop of ice cream on a cookie without chocolate on top. Add a chocolate pastille, then place a second cookie, but this one with chocolate incorporated on top. Place a circle of marshmallows on the cookie with chocolate on top. Grill the marshmallows with a blowtorch. Repeat 5 more times and enjoy.
