Italian sausage on a stick, Korean style

Ingredients

3 Italian sausages

125ml (1/2 cup) curds cheese

 

Dough:

5ml (1 teaspoon) Instant yeast

250ml (1 cup) all-purpose flour

250ml (1 cup) rice flour

5ml (1 teaspoon) salt

375ml (1 ½ cups) warm water

1 egg

4 wooden sticks 

125ml (1/2 cup) Panko breadcrumbs 

 

Topping:

Poutine sauce 

Spicy mayonnaise

Preparation

Preheat oven and fryer to 175°C (350°F).

 

  1. Remove sausage membrane. Place the meat in a bowl and add the curds cheese. Mix together and form 4 small rolls, about 1” in diameter. Wrap each roll separately in parchment paper and aluminum foil. Bake for 10 to 12 minutes. Once out of the oven, place the Italian sausages in the refrigerator to cool.

 

  1. Prepare the dough. Place flour, rice flour, baking powder and salt in a bowl and mix. Add warm water and egg. Mix until smooth. Let stand at room temperature for 1 hour. Transfer the dough to a 1-liter container.

 

  1. Insert a stick into each cooked Italian sausage and sprinkle flour over the top of the meat. Dip each stick into the dough (in the 1-liter container) to cover the entire sausage meat. Then roll each stick in panko breadcrumbs. Fry Italian sausages on sticks for 3 to 5 minutes, turning regularly.

 

  1. After removing from the fryer, drizzle poutine sauce and spicy mayonnaise over the Italian sausages on sticks and serve.
